
A simple dish that you can have by itself of with some Chinese curry or stir fry!
Make with whatever veg you have lying around. Its best to use day old rice which has dried out slightly and the grains are separate. Substitute with brown rice for a healthier alternative!

Ingredients
- 4 eggs beaten
- 3 cups cooked rice
- 5/6 spring onions chopped with greens
- 4/5 cloves garlic minced
- 2 cups grated carrots
- 3 mixed coloured peppers
- 3 tsp dark soy sauce
- Salt and pepper to taste
- 2 tbsp toasted sesame oil
Method
- Heat half the oil in a wok and scramble the eggs. Once scrambled turn of the heat and take out the eggs and keep aside
- Clean the wok with a kitchen towel and put it back to heat
- Add the remaining oil and cook the garlic, spring onions (except the greens) for a minute
- Add the remaining veg and cook for a few minutes
- Turn down the heat and add the cooked rice
- Stir everything together
- Add soy sauce and mix well
- Finally add the scrambled eggs and spring onion greens
- Add salt and pepper to taste and serve hot
