Chop Suey is an easy stir fry dish that can be put together in minutes for a lovely satisfying meal.
This is a simple vegetable chopsuey recipe that can easily be adapted by adding diced chicken or prawns. You can also modify the vegetables based on what you have or to suit your preference. Bok choy, water chestnuts, snow peas, peppers, broccoli and courgette also go really well with this.

Ingredients
- 2 onions thinly sliced
- 250g chestnut mushrooms (or any other type of mushrooms)
- 2 celery stalks, sliced
- 2 carrots sliced
- 2-3 garlic cloves minced
- 2 red chillies minced
- 300g fresh bean sprouts
- 2-3 tbsp toasted sesame oil
- 2 tbsp water
- 2 tbsp dark soy sauce
- 1 tbsp rice wine
- 1 tsp sugar
- 2 tsp corn starch
Method
- Heat the oil in a wok on medium high
- Add the garlic and onion and cook for 2 minutes
- Add the carrot and celery and cook for a further 3-4 minutes stirring continuously
- Add the mushrooms and beansprouts and cover and cook for about 6-7 minutes stirring a couple of times
- Make a sauce with the rest of the ingredients by mixing them together in a small bowl
- Pour the sauce in the wok, stir well to coat everything and cook for 5 minutes
- Serve immediately with egg noodles or rice
