Banana Bread

What’s the best thing to do with overripe bananas? Banana bread of course!

My kids wait for the bananas to get overripe so they can help me make some!

Overview

  • Serves: 6-8
  • Difficulty: Easy

Ingredients

  • 125g butter at room temperature
  • 1 cup caster sugar
  • 2 medium eggs
  • 3 very ripe bananas (mashed)
  • Half a cup chopped walnuts (optional)
  • One and three quarter cups self raising flour
  • Pinch of salt
  • One tbsp vanilla extract

Method

  • Pre heat the oven to 160 °C fan
  • Beat the butter till soft in a large mixing bowl
  • Add the caster sugar and beat till soft and creamy
  • Add the eggs one by one and beat
  • Add the vanilla extract and mashed bananas and mix
  • Sift the flour and fold it in along with a pinch of salt
  • Finally add the chopped walnuts and fold in
  • Pour in a pre lined bread loaf tin
  • Bake for 40-45 minutes or until skewer comes out clean
