What’s the best thing to do with overripe bananas? Banana bread of course!
My kids wait for the bananas to get overripe so they can help me make some!

Ingredients
- 125g butter at room temperature
- 1 cup caster sugar
- 2 medium eggs
- 3 very ripe bananas (mashed)
- Half a cup chopped walnuts (optional)
- One and three quarter cups self raising flour
- Pinch of salt
- One tbsp vanilla extract
Method
- Pre heat the oven to 160 °C fan
- Beat the butter till soft in a large mixing bowl
- Add the caster sugar and beat till soft and creamy
- Add the eggs one by one and beat
- Add the vanilla extract and mashed bananas and mix
- Sift the flour and fold it in along with a pinch of salt
- Finally add the chopped walnuts and fold in
- Pour in a pre lined bread loaf tin
- Bake for 40-45 minutes or until skewer comes out clean
