
Another recipe for the school cook book – this was a winner! I absolutely loved it!
Recipe suggestion – my sister Ami, and made entirely by Si with a bit of assistance from her Ami masi!!!
Overview
- Serves: 4-6

Ingredients
- 750 gms – Baby potatoes
- Ghee – 4 tablespoons (substitute with butter if you don’t have ghee)
- Yogurt – half cup
- Fresh coriander leaves chopped – 2 tablespoons
Spice mix
- 2 tbsp coriander seeds powder
- 1 tsp cumin seeds powder
- 2 tsp dry pomegranate seeds powder
- 1 tsp dry mango powder (increase this to 2 tsp if you are not using pomegranate seeds powder)
- 1 tsp sesame seeds
- 1 tsp pepper powder
- 1 tsp chilli powder (optional if you want it spicy)
- Salt to taste
Method
- Steam the baby potatoes after washing
- Once steamed let it cool for a few minutes and remove skin while still hot
- Combine all the ‘Spice mix’ ingredients in a large bowl
- Add the potatoes to the spice mix and toss well
- Let this marinate for 30 minutes
- Warm the ghee in a frying pan and add the yogurt
- Cook the yogurt till it reduces to half
- Add the potatoes to the pan with yogurt and cook for 10 minutes
- Arrange the potatoes on a serving tray and stick a toothpick in each and serve while still warm sprinkled with chopped coriander
