
This is one of my favourite salads! Full of flavour…very healthy….extremely easy to make….and insanely good!!!
Overview

Ingredients
Salad
- One can of chickpeas (300g)
- 2 ripe mangoes chopped
- One cucumber chopped
- One red pepper chopped
- Cherry tomatoes halved
- Sweet corn (200g)
- Chopped herbs (coriander, parsley, mint)
Dressing
- 1/4 cup extra virgin olive oil
- 4 tbsp honey (or maple syrup if you want to keep it vegan)
- 2 tbsp freshly squeezed lemon juice
- 1/2 tsp red wine vinegar
- 3 tsp freshly ground cumin powder
- 1 tsp red chilli powder
- Salt to taste
Method
- Whisk together all the dressing ingredients and keep aside
- Add all the salad ingredients in a large bowl and mix well
- Add the dressing just before serving
