
Very quick to put together and top with whatever flavours you fancy! Great recipe to get the kids involved.

Ingredients
- Ready puff pastry sheets (I’ve used Jus-Rol Ready rolled sheets)
- One cup caramelised onions (I had some left from an earlier recipe else slice 4 large white onions and sweat them down till dark brown with olive oil or butter)
- Roasted red peppers (ready from a jar or make your own)
- Feta cheese
Method
- Pre heat the oven to 170 C (fan assisted)
- Cut two pastry sheet into 4 squares each (total 8 squares) and arrange them on two baking tray keeping a little space between each square
- Score a smaller square inside each square (without cutting through) to create a border
- Put your filling on the inside square – first the caramelised onions, then roasted peppers (I’ve used ready roasted peppers and chopped them) and finally top with feta
- Bake for 15-20 minutes
