After an overdose of rich food and yummy mango desserts all you need is a simple meal that can be put together in about 20 minutes! This one is adapted from my mum’s recipe and I love the simplicity of its flavours. I love it with some rotis and a bowl of dal….perfect comfort food!
This was an unplanned meal – I had some carrots and cabbage to finish off so just put this together as I didn’t feel like making an elaborate meal…
Overview

Ingredients
- Cabbage – 2 cups thinly sliced
- Carrots – 1 cup thinly sliced
- Green chillies – 2 or 3 slit lengthwise
- Mustard seeds – 1 tbsp
- A few curry leaves
- Turmeric powder – 1 tsp
- Salt to taste
- Cooking oil – 1 tbsp
- Handful of chopped coriander for garnish
Method
- Put a large cooking pan or wok on high heat
- Add oil and let it heat up
- Add mustard seeds and wait for them to crackle
- Once they crackle, add the curry leaves and slit green chillies and sauté for a few seconds
- Add the chopped cabbage and stir well
- Season with turmeric powder and salt and cook for about 2-3 minutes
- Finally add the chopped carrots and stir well
- Cook for a further 2-3 minutes
- I like a bit of bite so for me its done after a few minutes of cooking but if you prefer it well cooked cook for a further 4-5 minutes
- Garnish with chopped coriander and serve hot with chappatis and dal or rice and dal
