Carrot & Cabbage Stir Fry

After an overdose of rich food and yummy mango desserts all you need is a simple meal that can be put together in about 20 minutes! This one is adapted from my mum’s recipe and I love the simplicity of its flavours. I love it with some rotis and a bowl of dal….perfect comfort food!

This was an unplanned meal – I had some carrots and cabbage to finish off so just put this together as I didn’t feel like making an elaborate meal…

Overview

  • Prep time – 10 minutes
  • Cooking time – 10 minutes

Ingredients

  • Cabbage – 2 cups thinly sliced
  • Carrots – 1 cup thinly sliced
  • Green chillies – 2 or 3 slit lengthwise
  • Mustard seeds – 1 tbsp
  • A few curry leaves
  • Turmeric powder – 1 tsp
  • Salt to taste
  • Cooking oil – 1 tbsp
  • Handful of chopped coriander for garnish

Method

  • Put a large cooking pan or wok on high heat
  • Add oil and let it heat up
  • Add mustard seeds and wait for them to crackle
  • Once they crackle, add the curry leaves and slit green chillies and sauté for a few seconds
  • Add the chopped cabbage and stir well
  • Season with turmeric powder and salt and cook for about 2-3 minutes
  • Finally add the chopped carrots and stir well
  • Cook for a further 2-3 minutes
  • I like a bit of bite so for me its done after a few minutes of cooking but if you prefer it well cooked cook for a further 4-5 minutes
  • Garnish with chopped coriander and serve hot with chappatis and dal or rice and dal
